This is the recipe our brother in law brings every Thanksgiving. It is one of my favorites and uses winter fruits and the dressing makes it one of my favorite salads to eat
For the dressing:
1/2 c. sugar
1/2 c. lemon juice
1/2 tsp. salt
2 tsp. diced onion (can use minced)
1 tsp. Dijon mustard
2/3 c. oil
1 Tbsp. poppy seeds - Mix with blender or hand blender
For the Salad:
1 head romaine lettuce, torn into bite size pieces
4 oz. shredded swiss cheese
1 c. cashews
1/4 c. dried cranberries (Craisins)
1 apple, peeled cored and diced
1 pear, peeled cored and sliced
